— For the restaurant chef, CFO, owner, or menu leader
Can a marketplace statement show which menu items are profitable for delivery?
How to calculate delivery menu-item contribution
A marketplace statement alone usually cannot prove item-level profitability. Combine order or item detail with current recipe cost, packaging cost, platform-specific menu price, restaurant-funded discounts, refund or error behavior, and an approved method for allocating platform fees and incremental labor.
Start with high-volume or high-error items instead of spreading weak assumptions across the full menu. Show contribution before fixed overhead and identify estimated inputs. An item can have strong sales but poor contribution because of discounts, packaging, error charges, or an outdated digital price.
— What working formula does this answer use?
Estimated item contribution = item revenue − allocated platform costs − restaurant-funded discount − food − packaging − attributable labor and error cost
— Field checks
- 01Join item-level marketplace and POS detail.
- 02Use current recipe and packaging cost.
- 03Flag assumptions and start with material items.
— Evidence to keep
- • Item-level orders
- • Recipe and packaging cost
- • Allocation method for fees and labor
